Torcolo Perugino or di San Costanzo is a typical cake of Perugia which is traditionally made on the 29th of January for the occasion of Saint Constance, the patron of the city. All the iconography representing him dates from this period. Every year there is a historical re-enactment in period costume in the form of a procession from the Town Hall to the Basilica. Five important elements feature. They are laurel leaves, candles, vinsanto, incense and the torcolo.
Popular tradition suggests the circular shape is reminiscent of the garland which adorned the head of the decapitated martyr. Another more romantic story has it that the torocolo symbolizes an engagement ring.
